Dong says that China, which has a long tradition in culinary arts, must have high-quality dishes that represent classic Chinese food culture. The chefs should prepare dishes with choice ingredients that follow modern health concepts and nutrition, Dong says.
Dong has explored ways to combine traditional Chinese food with beautiful Western presentation. With the establishment of the Celebrity Chef Committee, Dong hopes to hold more activities that raise the level of culinary skills in China's restaurants.
